CAJUN BLUE CHEESE & ANDOUILLE BURGERS

NEED

  • 1 pound Ground Chuck or Ground Round
  • 1 pound Andouille Sausage
  • 1 large Onion
  • crumbled Blue Cheese
  • Olive Oil or oil of choice
  • Mayonnaise
  • condiments & toppings of choice
  • favorite Hamburger Roll
  • CAJUN GATOR BITE SPICE RUB

Cut onions & season lightly with CAJUN SPICES. Fry onions with oil of choice until they become soft & translucent.

Next, take Andouille Sausage out of casings & mix thoroughly with ground beef. Form meat into 4 oz. patties. Shake CAJUN SPICE RUB liberally onto both sides of the burgers. Rub the spices gently into both sides with your hands. This rub will create a flavorful, concentrated crust on the outside of the burgers while sealing in the juices.

Cook the burgers over an open flame to desired doneness. Be careful not to burn the burgers, or they will dry out & lose flavor.

Finally, lightly season the desired quantity of mayo with CAJUN SPICES. Then combine the burgers, onions, blue cheese crumbles, mayo, & desired toppings to your favorite roll & enjoy.


SOUTHERN FRIED CAJUN CATFISH

NEED

  • 3 to 4 pounds Catfish Fillets, skin removed
  • 2 cups All-Purpose Flour
  • 2 cups Cornmeal
  • Oil for frying
  • CAJUN GATOR BITE SPICE RUB

Heat a deep fryer or skillet with oil to 350 Degrees F.

Combine the Flour, & Cornmeal in a large bowl. Season the mixture with the CAJUN GATOR BITE SPICE RUB to taste. Stir the ingredients thoroughly.

Dredge the Catfish in the Flour-Cornmeal mixture & place in the skillet or deep fryer.

If using the deep fryer, fry for about 7 to 8 minutes.

If using the skillet, fry about 4 minutes per side.

Drain the Catfish Fillets & Enjoy.
