5 to 8 pound Boston butt or pork shoulder
Pulled Porky Carolina Q Spice Rub
Crusty soft sandwich rolls
Coleslaw
Favorite BBQ sauce, vinegar sauce, & or hot sauce
1 cup cider vinegar
1 tablespoon sugar
1 teaspoon crushed pepper flakes
salt & pepper to taste
The night before shake the Pulled Porky Carolina Q Spice Rub liberally & evenly over the pork. Make sure to pat & rub the spices into the meat so the rub adheres. Place into the refrigerator over night until you are ready to cook the next day.
Pre-heat smoker to 225 degrees. Try to keep the temperature between 215-250 degrees throughout the cooking process. Cook the pork about 1 1/2 hours per pound until the meat reaches an internal temperature of 190 degrees at the thickest part. The pork is done when it easily pulls apart with a fork. Let the meat rest for about 1/2 hour after cooking to allow the juices to settle. Proceed to pull the meat apart with two forks.
The pork can also be prepared in an oven. Wrap the meat in aluminum foil & place in a roasting pan at 300 degrees. Cook about 1 1/2 hours per pound or until the internal temperature of the meat reaches 190 degrees at the thickest part. Let pork rest 1/2 hour after cooking, then pull apart with two forks.
Serve pulled pork on a roll with coleslaw, BBQ or vinegar sauce, & hot sauce if desired.
